Chocolate Walnut Brownie


Shall we go for a Chocolate Walnut Brownie (eggless)?

Ingredients:-

1. Maida - 1 cup
2. Sugar - 50 gms
3. Butter - 50 grms
4. Condensed Milk - 1/2 cup
5. Baking Soda - 1 tsp

6. Baking Powder - 1 1/4 tsp
7. Chopped walnut and Almonds - 1/4cup (reserve some for decoration)
8. Cooking Chocolate (I used Hersheys semi sugar ) - 125 grms.
9. Water - 60 ml

For Baking:-
1. Oven Pre-heat - 180C for 10 mins.
2. Butter Paper
3. Baking Tray

Method :-
1. Sieve Maida, Baking Powder, Baking Soda twice and Keep aside.
2. Mix Condensed Milk and Water in a Bowl.
3. Double boil the Chocolate. (In a big vessel boil water and in that Boiling water Keep the Chocolate in a vessel to melt)
4. Beat Butter and Sugar till creamy.
5. Then add condensed Milk, Melted Chocolate and mix well.
6. Now goes Flour and Chopped Nuts, mix gently.
7. In a Baking tray put butter sheet and Pour this mixture, level it by gentle shaking.
8. Bake in preheated oven till 40 mins or till done.

And Do I need to tell you what you enjoy most............ .
...Warm Brownie with Vanilla Ice cream and/or Chocolate Sauce......


Notes:-
a. Garnish remaining Nuts when its half baked.
b. Completely cool and cut into squares.
c. White Choco Chips can be Sprinkled while baking to get double choco brownie.

Peanut Chocolate Muffins
Muffins with Peanut Butter and Peanut Chocolate.
Picked this while browsing a Cook Book.
I made this for my friends daughters birthday.
Makes 12 Muffins
.

Ingredients needed:
1. Plain flour 250 gms
2. Peanut Bar (Snickers) - 3
3. Crunchy peanut Butter 6 tablespoons
4. Sugar 6 tablespoons
5. Baking Soda 1 1/2 tsp
6. Pinch of Salt
7. Unsalted Butter 60 gm
8. Egg - 1 (Egg Replacer - 1 1/2 tsp mixed with 2 tbsp of milk.)
9. Milk 175 ml
Method:
1. Preheat the Oven to 200 degree
2. Stir together the Flour, Sugar, Baking Powder, Salt, Peanut Butter till resembles likebread crumbs.
3. Add the melted butter and egg to the milk.
4. Stir this gently in a bowl. Mix in the Snicker pieces.
5. Line Paper cups in a tray and add this mixture and bake in the oven till done. {Approx 20 mins in 200° C
}

Jam Cookies




I tried Viji's Thumb Impression cookies.

I used Strawberry and Apricot preserve as topping and omitted Cashew powder but followed the her method to the T.

It came out well and liked by everyone in my family and friends.

Malai (Cream) Cake
Another Eggless Cake from me.
Has Full cream and Soya Milk
.


Measure of Main Ingredients:
1. Nestle Full Cream - 1 tin
2. Maida - 1 Cup
3. Sugar - 3/4 Cup
4. Baking Soda - 1 tsp
5. Baking Powder - 3/4 tsp
6. Vannila essence 1 tsp
7. Soya Milk 1/2 Cup
Method:
1. Beat Sugar and Cream together till Sugar dissolves.
2. Sieve Maida, Baking Powder, Baking Soda together and keep it aside.
3. Now, add Maida mixture 2 tablespoons, and 2tsp of Soya Milk.Follow the procedure till all the Maida consumed.
4. Dough should be in pouring consistency.
5. Bake in a preheated oven on 170° C for 20 mins and 150° C for another 20 minutes or till done.
* Malai Cake is Ready.

Banana Muffins


My Son had asked me to try out Muffins for a weekend.
It had been awhile that I had used my newly bought Oven.[now few months old]
This Recipe was given by a friend. Thanks to her and I share my Banana Muffins with you all
.

Measure:-
1. Banana 2 - Fully Ripe
2. Plain Flour - 1 cup
3. Baking Soda - 1/2 tsp
4. Baking Powder - 3/4 tsp
5. Sugar Powder - 6 Tblsp
6. Honey - 2 table spoons
7. Cinnamon Powder - 1/2 tsp
8. Butter - 3 to 4 tablespoons
9. Pinch of Salt
10. Vanilla Extract - few drops

Method:
1. In a vessel take Butter, Honey, Vanilla extract and Melt it and keep it aside
2. In another bowl, mash Bananas and add Melted Butter Mixture.
3. Sift the Flour, Baking Powder, Baking Soda, Cinnamon Powder, Sugar Powder together and keep it aside.
4. Mix this Flour with the Mashed Bananas and the Butter mixture and gently mix all these with wooden spatula.
5. Preheat the Oven 180° C.6. Put the paper cups in the Muffin Pan and fill them about 2/3rds and Bake at 180° C for about 25 mins or till done.

Note:1. Sprinkle some Almond or Walnut bits to make this more interesting.

Spicy Vegetable (Potato) Puff
Sold in Bakeries Indiawide.
Uniquely Tasty.
Goes well with an Evening Tea

Measure 1: Ingredients
1. Puff Pastry (I used the locally available Sunshine Puff Pastry)
2. Melted Butter 1 tsp

Measure 2: For Stuffing
1. Potatoes - 2
2. Beet Root - 1/2
3. Green peas - 1/4 cup (Frozen)
4. Ginger and Green Chilli paste - 1 tsp
5. Garam Masala - 1/2 tsp
6. Salt - To taste
7. Lime Juice - 1/4 tsp
8. Onion Finely chopped - 1 (Optional)
9. Oil - 1 tsp

Method:
1. Boil Potatoes, Beetroot and Peas. Mash them well and keep aside.
2. Heat Oil in a pan, add Chopped Onions, Ginger & Green Chilli paste and fry well.
3. Add Mashed Potatoes, Beetroot and Peas and cook for a few minutes.
4. Sprinkle Garam Masala and Lime juice.
5. Thaw Puff Pastry and roll it to a rectangle of 1/2 inch thickness.
6. Put the filling inside and close. Seal this with water.
7. Refrigerate these for about 30 minutes.
8. Bake in a Pre-heated Oven for 25 minutes in 180° C.
9. Before baking bursh slightly with melted butter.

Note:-1. If you have rolled the Puff Pastry into a Square, fold them diagonally.

Eggless Orange Sponge Cake
My Second Attempt to baking .
My Maiden attempt to Bake a Cake.

Eggless Orange Sponge Cake
Ingredients Needed:
1. Self raising flour - 2 cups
2. Butter - 100 Grams
3. Sugar Powder 1/2 cup (I used 3/4 cup and the cake came out very sweet)
4. Condensed Milk - 1 cup
5. Carbonated Orange Drink - 200ml. (I used F&N Orange Drink)
6. Baking Soda - 1/2 tsp (Soda Bi-Carbonate)
7. Baking powder - 1-1/2 tsp
8. Butter - To grease the Cake Pan

Method:
1. Sieve Flour, Baking soda and Baking Powder 2 times and keep it aside.
2. In a bowl, take Sugar powder, butter and condensed. Beat this mixture till creamy.
3. Now goes the Carbonated drink into this mixture.
4. Gradually add Flour and mix well. This mixture should be of Dosa flour consistency.
5. In a pre-heated oven, pour this mixture in a Cake Pan and Bake this mixture in 170° C for 40 mins.
6. Cool and serve.


Cake came out decent enough to share it with you all.I know I have to go some more lengths to get that perfect cake. :-)

Fruit Cookies
Baking has not been tried well by me.
So, I recently bought a small OTG.
Maiden item with this is the Fruit Cookies that I post here.
These cookies are made without eggs

Fruit Cookies

Here is the procedure for Fruit Cookies:

Ingredients Needed:
1. Self Raising Flour 5 cups (sieve and measure)
2. Butter 4 cups (Room temperature)
3. Sugar Powder 3-1/2 cups
4. Vannila Essence
5. Fruit Mix 3 table spoons.
6. Salt a Pinch

Method:
1. In a Big bowl, take butter and sugar powder and beat well in one direction.
2. When it becomes soft and creamy, add essence and fruit mix.
3. Now, Gradually add self raising powder to make like chappathi dough.
4. Take a small lemon size dough, flatten it and arrange in the Baking tray. (Leave some gap in between cookies.)
5. Bake in preheated oven in 150C for 12 to 14 mins.
6. Cool and store in an air tight container.

Note: No need to add any baking soda or powder to the dough. Self raising flour itself contains baking powder.

Baked Vegetables

Baked vegetables

Mixed Vegetables in White Sauce and baked with Grated Cheese.

Ingredients Needed:
1. Mixed Vegetables Each 1/2 cup (Beans, Carrot, Potato, Cauliflower, Broccoli, Baby Corn, Peas) - Cut into cubes.
2. Small Shallots - 2, stuck 2 to 3 cloves in each shallots
3. Maida - 2 tablespoons
4. Milk - 2 cups
5. Black Pepper powder
6. Salt - to taste
7. Grated Cheese - 1/2 cup
8. Butter - 2 tsp

Preparation of White sauce:
1. Heat butter in a kadai/saucepan, fry Shallots, Maida in slow flame and gradually add
Milk, mix well without forming lumps. Make the sauce in thick consistency.
Add Pepper powder and keep it aside.
2. Steam the vegetables and mix white sauce. Check for salt.
3. Cover these vegetables with grated cheese and bake it till brown or Cheese melts.

Serve with Toasted Bread or Focaccia Bread. Nutritious breakfast. Suggest you to skip lunch that day. ;-)
