Sago Payasam

~ Traditional dish but served in all (Bhavan's) South Indian Meals.
~ Light Dessert.

Ingredients Needed:
1. 4 table spoon Sago
2.1/2 lit milk (boil for atleast 20 minutes)
3. Water
4. Ghee for frying sago , cashew, raisins
5. Sugar According to taste
6. Saffron few strands
7. Elaichi Powder

Method:

1. Heat Ghee in a kadai fry Cashews and Raisins and keep it aside.
2. Fry Sago till it pops.
3. Add water and cook till Sago looks transparent.
4. Drain water and add Sago to the boiling Milk and Cook for a further 5 to 8 minutes.
5. Add sugar, mix well, bring it to a boil and switch off.
6. Mix Elaichi powder, fried Cashews and Raisins and Saffron. (soaked in Warm Milk)

hi MT,sago payasam is great.My grandmother used to give us this one in summers as sago is considered to be cooling to the body.

Hi MT,
I tried the sago payasam but when I cooked the sago it was very white, hard and crunchy not soft. It didnot become transparent. Can you please tell me what I did wrong.

I Think you used very small pearl white sago. For that type of sago please pour boiling hot water on it.Keep closed for 5 minutes.Then make payasam.

Hi MT, which Bhavan did you mean? Saravana? I've never seen payasam served with any meal in any hotel! They usually give gulab jamun or some "Bengali sweet"

Sago payasam looks great, my mother used to make it in summers every other day. But I never tried making it myself..
